1. In a large mixing bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.

5. Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper.
6. In a large pot, bring 10 cups of water and baking soda to a boil.
7. Divide dough into 8 pieces. Roll each piece into a rope and shape into a pretzel.
8. Boil each pretzel in the baking soda bath for 30 seconds. Remove with a slotted spoon and place on the prepared baking sheet.
9. Brush each pretzel with the egg yolk mixture and sprinkle with coarse salt.
10. Bake for 12-15 minutes until golden brown.
