Ingredients

  • 1 lb dried black-eyed peas rinsed and sorted
  • 6 cups water
  • 1 ham hock
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon crushed red pepper flakes

Instructions 

  1. 1. In a large pot, combine black-eyed peas and water. Bring to a boil.
  2. 2. Add ham hock, onion, and garlic. Reduce heat and simmer for 45 minutes.
  3. 3. Add salt, black pepper, and red pepper flakes. Simmer for another 15 minutes.
  4. 4. Remove ham hock, chop meat, and return to pot. Serve hot.
