Main Ingredients
- 2 large sweet potatoes peeled and cubed
- 1 medium onion chopped
- 3 cloves garlic minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
1. In a large pot, sauté the onion and garlic until fragrant.
2. Add the sweet potatoes and vegetable broth. Bring to a boil, then simmer until the potatoes are tender.
3. Blend the soup until smooth using a blender or immersion blender.
