Thai Rice Noodle Salad Recipe

Salad Ingredients
- 200 g rice noodles
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 1 cucumber, thinly sliced
- ¼ cup fresh cilantro, chopped
- ¼ cup fresh mint, chopped
Dressing Ingredients
- 3 tablespoon lime juice
- 2 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 clove garlic, minced
- 1 red chili, thinly sliced optional
1. Cook the rice noodles according to the package instructions. Drain and rinse with cold water.
2. In a large mixing bowl, combine the cooked rice noodles, red bell pepper, carrot, cucumber, cilantro, and mint.
3. In a small bowl, whisk together the lime juice, fish sauce, soy sauce, brown sugar, garlic, and red chili (if using).
4. Pour the dressing over the salad and toss to combine.
5. Serve immediately or refrigerate for up to 2 hours before serving.
