Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups vegetable broth
  • 2 cans black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper to taste
  • 1 lime, juiced
  • 0.25 cup fresh cilantro, chopped for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrot, and celery. Sauté until vegetables are tender, about 5-7 minutes.
  2. Stir in cumin and chili powder, cooking for another minute.
  3. Add vegetable broth, black beans, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Using a blender, puree half of the soup until smooth. Return to pot and stir to combine.
  5. Season with salt and pepper to taste. Stir in lime juice.
  6. Serve hot, garnished with fresh cilantro.
