Ingredients 

Main Ingredients

  • 2 cups split peas
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions 

  1. Rinse the split peas under cold water.
  2. In a large pot, sauté the onion and garlic until softened.
  3. Add the carrots and celery, cook for a few more minutes.
  4. Add the split peas, vegetable broth, thyme, and oregano. Bring to a boil.
  5. Reduce heat and simmer for about 1 hour, or until peas are tender.
  6. Season with salt and pepper to taste. Serve hot.
