Vegan Split Pea Soup Recipe

Main Ingredients
- 2 cups split peas
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
Rinse the split peas under cold water.
In a large pot, sauté the onion and garlic until softened.
Add the carrots and celery, cook for a few more minutes.
Add the split peas, vegetable broth, thyme, and oregano. Bring to a boil.
Reduce heat and simmer for about 1 hour, or until peas are tender.
Season with salt and pepper to taste. Serve hot.
