  • 1 cup All-purpose flour
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 units Eggs, beaten
  • 1 tablespoon Olive oil

Instructions 

  1. Grate the zucchini and squeeze out excess moisture.
  2. In a mixing bowl, combine grated zucchini, flour, salt, pepper, and beaten eggs.
  3. Heat olive oil in a frying pan over medium heat.
  4. Scoop spoonfuls of the mixture into the pan and flatten slightly. Cook until golden brown on both sides.
  5. Drain on paper towels and serve warm.
