- 2 cups Zucchini, grated
- 1 cup All-purpose flour
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 2 units Eggs, beaten
- 1 tablespoon Olive oil
Grate the zucchini and squeeze out excess moisture.
In a mixing bowl, combine grated zucchini, flour, salt, pepper, and beaten eggs.
Heat olive oil in a frying pan over medium heat.
Scoop spoonfuls of the mixture into the pan and flatten slightly. Cook until golden brown on both sides.
Drain on paper towels and serve warm.
