Ingredients 

Main Ingredients

  • 125 g Butter softened
  • 125 g Caster Sugar
  • 2 Eggs large
  • 125 g Self-Raising Flour sifted
  • 1 teaspoon Vanilla Extract
  • 2 tablespoon Milk

Instructions 

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with cupcake liners.
  2. Cream the butter and sugar together until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Fold in the flour, then add the milk and mix until smooth.
  5. Spoon the mixture into the cupcake liners, filling each about two-thirds full.
  6. Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
